Choucroute Garnie
With everything that’s been going on with my mother-in-law, I haven’t had the time and energy to cook a proper meal at home. For two days, I’ve left home early morning to join my mother-in-law at the hospital and from there, went to the office. Because I’ve been late coming in in the morning, I try to stay a little later at night. When I get home, I feel the exhaustion just piling up on my shoulder and I can barely drag my feet to get to bed, let alone cook. In short, we haven’t been eating well. On the third day, Dad decided to take matters in his hands.
Quick Menudo
Tonight’s dinner comes from Good Housekeeping, a collection of easy everyday meals copy, I bought a few years back. I am making Quick Menudo. I chose to skip on the pork liver and raisins because Hubby doesn’t like raisins and I don’t like pork liver. I’ve always been confused with menudo, afritada, caldereta, and mechado. They are so much alike! I guess maybe it’s because they’re all tomato-based. I know afritada is usually made with chicken and caldereta is made with goat meat and sometimes beef, mechado and menudo can be made with beef or pork. I might have to research a little further on that. Anyways, back to today’s recipe, this version of quick menudo is made of ground beef, tomato sauce, potatoes, garbanzos, and bell peppers. True to its name, it took just about 20 minutes to have dinner ready on the table.
Baby Back Ribs
A new dish hubby just perfected. It took him about a month to practice but I must admit it is really good. Even as good as the one in Casa Verde and Bigby’s.
