Adobong Sitaw – String Beans Adobo

Getting married and giving birth has unfortunately helped me pack a couple of extra kilos which I’d rather not have. Thankfully, between breastfeeding and mild exercise (mostly walking), I’ve lost a pretty good amount of weight but it’s the last 10 kilos which really bug me. It just won’t go away! Hubby is on the same boat as I am. But luckily for him, the gained weight is a perfect addition to his naturally thin frame. However, we like to watch what we eat especially with Baby, who is eating solids as well. Sometimes, if I feel like we’ve eaten too much meat that week, I’ll make a pure vegetarian dish, like today’s dinner, Adobong Sitaw or String Beans. I usually add meat to this meal but I decided to opt it out and it was still very fulfilling to our stomachs. Heck, it’s adobo anyways, what can go wrong with adobo, right?

Adobong Sitaw - String Beans Adobo

Ingredients:

  • 2 Bundles Sitaw/String Beans
  • 5 garlic, minced
  • 1 small onion, chopped
  • 1 cup water
  • ¼ cup soy sauce
  • 1/8 cup vinegar
  • Black pepper
  • Cooking oil
  • Toasted garlic bits for garnish (optional)

Directions:

In a pan, heat oil and fry the garlic and onion until fragrant. Pour in soy sauce, vinegar, and water. Add black pepper. Bring to a boil and let it simmer for a couple of minutes. Do not stir (My mother always told me not to stir when cooking adobo. I don’t know if it makes a difference or not). Add in string beans and let vegetables cook through. Be careful not to overcook the string beans; it should be firm. Transfer to a plate and garnish with toasted garlic bits (I don’t usually do this last step, but I had extra toasted garlic on hand so I decided to go for it). Serve hot and enjoy!
