Crab, Shrimp, and Potato Salad
I found really nice chunky fresh crabmeat the other day at Metro Gaisano Ayala Supermarket and I could not resist getting some. Not much was left so I got all of what was remaining, which was about 500 grams. The crabmeat was chunky and I thought I could make a really nice salad with it. The salad I usually have with crab is Kani Salad but that’s made with imitation crab. This time would be a great opportunity to try something new and make it from scratch.
East-West Salad
As I mentioned earlier, Hubby gave me a Salad Dressing Stirrer. On the sides of my stirrer, there are 5 dressing recipes namely: Caesar Salad Dressing, Dijon Vinaigrette, Creamy Vinaigrette, Jackie’s Vinaigrette, and Asian Vinaigrette.
Avocado and Ham Salad
This time around it’s my turn to make the avocados. It’s a simple salad that I used to enjoy a lot when I was younger. If my parents bought avocados, we would usually serve it in two ways; stuffed with small shrimps or in a salad with crabmeat. This time I decided to try with ham. I had a couple of slices that I bought in Tinderbox left in the refrigerator and I wondered if it would be good with the avocados. It was.
Simple Green Salad
In my opinion, a simple green salad is the easiest choice for a side dish in case of none. Many times I’ve kicked myself mentally for not preparing a side dish especially when I cook European or American dishes. It’s not like my hubby would complain. But, I have to admit, I’ve gotten used to relying on my rice when I cook Asian dishes. And since I was cooking Italian for dinner, I needed something quick. Thank God, I had just bought some beautiful Romaine greens the day before. This went great with my vinaigrette made of balsamic vinegar, mustard, garlic, egg yolk, and sunflower oil. I only use sunflower oil when I make a vinaigrette, something I inherited from my dad. But the balsamic vinegar and egg yolk was new. I usually would use red wine vinegar and omit the egg. But I wanted something new tonight. The egg yolk made the vinaigrette creamy, which I liked very much. I will certainly do this again. I could have salad everyday if only I was certain to find fresh and nice greens all the time. Some are very pricey here in Cebu, which is a shame, because salads are so easy to make!
