Today was a gloomy day! Not because it was raining the whole day (which it did), but because of the horrible bus-hijack incident yesterday. People on tv, radio, and online have been critiquing and giving their opinion about the event, but the real tragedy is the deaths of these innocent people. Tourists that were at the wrong place at the wrong time. One can only imagine what the survivors and the victim’s families are feeling and going through right now!

In most parties hosted by Filipinos, you are guaranteed to see the presence of a lechon in the buffet table. Lechon Baboy is a whole roasted pig that is succulent and somehow makes you forget your diet. If you’re a foodie, I’m pretty sure you know Lechon from Anthony Bourdain’s television show and his episode in Cebu. Cebu definitely has the best lechon in the Philippines. Some of the best are CNT, Rico’s, and Zubuchon.

This is my finalized recipe for the Seafood Pasta I posted earlier. Remember that one? I’ve been toying with making good seafood pasta ever since I found those mixed seafood packs in Rustan’s. This time around I used Linguine noodles. If you want to make a pasta dish with seafood, the best kind of pasta would be spaghetti or linguine.

I found really nice chunky fresh crabmeat the other day at Metro Gaisano Ayala Supermarket and I could not resist getting some. Not much was left so I got all of what was remaining, which was about 500 grams. The crabmeat was chunky and I thought I could make a really nice salad with it. The salad I usually have with crab is Kani Salad but that’s made with imitation crab. This time would be a great opportunity to try something new and make it from scratch.

Seafood Pasta

With the pack of mixed seafood I wrote about earlier, I decided to make Seafood Pasta, in a white wine and tomato sauce. One of the Italian restaurants in Cebu I like is La Tegola and one of my favorite dishes they make is Pasta al Cartoccio, which is seafood pasta in a tomato sauce. After cooking the pasta and mixing in the sauce, they wrap it up in foil and let it stay inside the oven for a couple of minutes. The dish is usually served unopened to your table and a waitress/waiter opens it in front of you. The smell that first lets out of that foil is heavenly!

Do you ever have “lazy days’?

I started having them in my college days and those were as often as I could have them. Lazy days are those days where you just basically stay the whole day in bed. You bring everything you need to go through the day with you to your bedside; food, movie selections, book, magazines, drinks, laptop with the charger. And you’re good to go! After I got my first job, that was reduced to weekends. After I was married, that was on one day of the month. When I became a mother that was officially gone. And yeah, I do think once in a while about those “lazy days”. These days, I’m lucky if I can get an hour or two of laziness. It just doesn’t work together; lazy days and kids. And although, I wouldn’t trade it for anything, I do sometimes think about those days.

Things are slowly picking up again and routines are going back to place. I still can’t believe how fast the Christmas season passed by. One minute I was preparing gift baskets to give to friends and family and the other poof! we were celebrating for the new year. It makes you realize just how fast life goes. Yesterday, I was watching my friend’s video diary of the things he’d done the past year and thought to myself “Damn, he’s done a lot. My life looked so bland compared to his.” Literally, he’s the textbook meaning of living life at it fullest every single day. I don’t do a lot of new year’s resolution, but I might take this one up. Although, Hubby did remind me that I did a lot too last year, in my own little way. I quit my job and decided to become a full-time housewife and a hands-on mother. I became serious with my food blog and realized that my passion in life was cooking. Although, I think I would also love photography and I’m crossing my fingers hoping I can finally buy the SLR camera I’ve dreaming of this year. I guess I just needed to be reminded by Hubby of how fulfilling my life has been. Many people don’t realize this but running a household and taking well care of a child is a full-time job in itself. But I’ve also loved every second of it, which is more than I can say from my previous job. Lately, my pleasure has been cooking in the kitchen with Baby. I do my own thing and she does her own too.
